Acanthus mollis 'Whitewater' is a striking variegated form of Bear’s Breeches, prized for its deeply cut green leaves splashed with creamy white markings. In late spring to summer it produces tall spikes of soft mauve and white hooded flowers that rise above the foliage, adding dramatic structure to shaded gardens. This clump-forming perennial typically grows around 80cm high and 1m wide, with flower spikes reaching up to 1.5m tall.

In Australia, Acanthus ‘Whitewater’ grows best in cool to temperate climates including Melbourne, Tasmania, and elevated parts of New South Wales. Plant it in part shade or morning sun with protection from harsh afternoon heat, especially in warmer regions. It prefers rich, well-drained soil improved with compost and benefits from regular watering during dry periods while establishing. Once mature it is reasonably hardy and tolerant of short dry spells. Remove old leaves in late winter to encourage fresh growth and apply mulch to keep roots cool and moist.
